CHEF'S DELIGHT: Beef Goulash

700g diced beef
30g plain flour
One large onion sliced
One red pepper sliced
2tbsp tomato puree
One tin of tomatoes
300ml beef stock
150ml sour cream
In a casserole dish, heat some oil. Toss the beef in the flour and fry to brown off, do this in batches and remove from the pan.
Add the onion, garlic and peppers to the pan and fry off util soft.
This should take about five minutes.
Add back in the beef and stir well. Then add the puree paprika, tin of tomatoes and stock.
Season well with salt and pepper.
Cover with a lid and place in the oven at 160 degrees for around two to three hours or you can cook on the hob.
Once the meat is tender, stire in the sour cream and serve with mashed potatoes and enjoy.
